I am so amazed—and so delighted—that canning is becoming a hot new trend.
Thirty nine years ago—oh, gosh, it almost hurts to say that—when I first learned to can and started putting up fresh produce from my garden, the craft of canning was nearly buried under the staggering weight of convenience foods.
We lived in a Montana ranching town at the time, and I remember that the only place you could buy canning supplies was at the hard goods store, just one dusty aisle down from the horseshoes and bits.
Today, the jar companies are cranking out home canning jars at a rapid clip as more and more of us realize that canning is a great way to preserve a piece of summer sunshine for the pantry.
But once the jar lids are sealed, how do you make sure you get the best out of every hand-packed jar.
